Amarone della Valpolicella is a lusty, full-bodied wine from the Valpolicella region in Veneto, made primarily from partially-dried Corvina, Rondinella, and Molinara grapes. The grapes undergo the traditional appassimento method, where they are dried for several months to concentrate their sugars and flavors before fermentation. This unique process gives Amarone its characteristic richness and complexity.

The wine offers a dry, firm structure, but its ripe, concentrated fruitiness—with flavors of dried fruits like raisins and figs, along with chocolate, spices, and tobacco—suggests a certain sweetness. Amarone typically has intense dark fruit aromas, including black cherry and blackberry, balanced by notes of herbs, licorice, and dried flowers.

On the palate, Amarone is known for its powerful body and smooth tannins, which provide a satisfying mouthfeel. Its high acidity keeps the wine fresh despite its richness. This wine is best paired with rich, savory foods, such as red meats, game, and flavorful cheeses, like Parmigiano-Reggiano, to complement its bold profile.

Although dry, the concentrated fruit gives Amarone a suggested sweetness, making it a great match for hearty dishes or simply enjoyed on its own. This wine has a great aging potential, often developing more complexity and nuanced tertiary notes over 10 to 20 years or longer.
