The Nuits-Saint-Georges 1er Cru Les Cailles 2016 from Domaine Robert Chevillon comes from the clay-limestone soils of the Côte de Nuits, ideal for producing elegant and powerful wines. Traditional vinification, with fermentation in open vats and aging in oak barrels (partly new), reveals complex aromas of ripe red fruits like cherry and raspberry, complemented by spicy and woody notes. On the palate, it stands out with a solid structure, fine tannins, and a well-balanced acidity, offering a long and persistent finish. This Nuits-Saint-Georges 1er Cru is perfect for aging 10 to 15 years and pairs wonderfully with game dishes, red meats in sauce, and aged cheeses.
