Assez fermé dans son jeune âge, le Latricières-Chambertin développe toute sa gamme aromatique lors qu'il est à parfaite maturité. On y retrouve des notes végétales, de champignons et de sous-bois. Le gibier est donc un des plats qui se marie parfaitement bien avec les Latricières-Chambertin.
La production moyenne de 40'000 bouteilles, est divisé entre les 12 producteurs.
