Sangiovese: the predominant grape of Chianti Classico, one of its main characteristics is the aroma of ripe cherry, with the bitterness of the pit at the finish.
Canaiolo: it is recognized as a grape variety that is part of the production of Chianti Classico. Its bouquet releases scents of well-ripened morello cherries. Even though it is rarely vinified alone, it will accompany all vegetable-based dishes, particularly stewed beans.
