Champagne is the wine of celebration and festivity par excellence. Today, it is the most well-known wine but also the most copied in the world.


With its 35,000 ha, the annual production of the appellation amounts to 338,000,000 bottles.


Three grape varieties are authorized in Champagne: chardonnay, pinot noir, pinot meunier.


The types of champagnes:


Champagne blanc de blanc: it is made from a single grape variety, chardonnay, which gives the wines extreme finesse.


Champagne blanc de noir: it is made exclusively from pinot noir and meunier. It is a fairly rare champagne because these two grape varieties are generally used for the production of blends.


Vintage champagne: it is only produced in great years and must age for at least 3 years on the lees.


Recently disgorged champagne: it is a champagne that has remained on its slats for a very long time and has therefore reached its maturity.


Food and wine pairings:


For many, champagne is an aperitif wine because it will sharpen your taste buds. However, it can also be paired with dishes.


Brut champagnes, due to their freshness and intensity, will pair wonderfully with white meats or waterfowl.


Blanc de blanc, a very fine and elegant champagne, will perfectly accompany a salad of porcini and chanterelles.


Blanc de noirs, the most structured of champagnes, will pair wonderfully with poultry or lobster, or even sweetbreads.
