Château Gilette is a unique estate located in Preignac, at the heart of the Sauternes appellation. Led by Julie Gonet-Médeville and Xavier Gonet, this cru stands out for its unique style and philosophy oriented towards the long term. Their atypical and rigorous approach gives birth to one of the most iconic and confidential sweet wines of the region.
Terroir & grape varieties: 4.5 hectares of extreme precision
The vineyard rests on gravel soils mixed with clay and sand, offering optimal drainage and deep rooting. The grape composition is mainly Sémillon (about 90%), with a bit of Sauvignon Blanc and Muscadelle, emblematic grape varieties of the Sauternes region.
Viticulture & philosophy: meticulous harvests, absolute aging wine
Each bunch is hand-picked in several passes, to capture the botrytis at the perfect stage. The viticulture is demanding, without compromise, with the aim of producing an exceptional raw material. The estate assumes a limited production, exclusively intended to highlight a unique cuvée.
Vinification & aging: a unique style, without barrels
The aging is done exclusively in hermetic concrete vats, for 15 to 20 years, without any passage in wood. This original method preserves the freshness, tension, and aromatic purity of the wine, allowing it to evolve slowly, protected from any oxidation.
Iconic cuvées
– Château Gilette “Crème de Tête”: the grand wine of the estate, only produced in great years. Golden robe, complex nose mixing exotic fruits, white flowers, beeswax, and quince paste. Concentrated, energetic, mineral palate, with a lively acidity that balances the richness.
– Château Les Justices: a second wine more accessible, carefully vinified and aged for only a few years. It reflects the house style in a more immediate version, always precise and gourmet.
