Domaine Roblet-Monnot — Pure, patient Pinot from Volnay
Located in Volnay, Domaine Roblet-Monnot is a hidden gem in the Côte de Beaune, run by Pascal Roblet, a pioneer of biodynamic viticulture in the region since 1997. The domaine has been in the family for four generations and today spans around 8 hectares of vineyards across Volnay, Pommard, Beaune, and the Hautes-Côtes.
Pascal’s vision is clear: let the earth speak through wine, without makeup, additives, or shortcuts.
Philosophy and winemaking
The estate is 100% biodynamic, with horse-plowing, herbal teas, and manual vineyard work. Yields are kept low to ensure natural concentration and balance.
In the cellar, fermentations are slow and spontaneous, often with whole cluster or partial destemming, and always with native yeasts. No chaptalization, no fining, no filtration. Wines are aged for 18 to 24 months in barrels, with minimal new oak and almost no intervention — only patience.
Wine style
Roblet-Monnot wines are textural, vibrant, and mineral-driven, with a firm but refined tannic frame and serious aging potential. They capture Volnay’s elegance, but with depth and grip rarely found in the appellation.
