History and Origin

Created in May 1936, the Château-Chalon appellation is one of the oldest in France. It takes its name from the picturesque medieval village of Château-Chalon, perched on a hill overlooking the Seille Valley. This village is classified among the "Most Beautiful Villages of France" and offers a breathtaking view of the surrounding vineyards.

Terroir and Climate

The vineyards of Château-Chalon cover about 50 hectares, mainly on steep slopes reaching 400 meters in altitude. The soil is composed of limestone marl, offering excellent drainage and a characteristic minerality to the wines. The climate is continental, with cold winters and hot summers, promoting a slow and steady ripening of the grapes.

Grape Variety and Winemaking

Savagnin is the exclusive grape variety of the Château-Chalon appellation. After alcoholic fermentation, the wine is aged under a layer of natural yeast, called "voile," which forms on the surface of the wine in the barrel. This oxidative aging lasts a minimum of six years and three months, during which the wine develops its characteristic aromas of nuts, curry, and dried fruits.

Traditional Bottle

The wine is bottled in a specific 62 cl flute, called "clavelin." This volume corresponds to the amount of wine remaining after six years and three months of barrel aging, according to local legend.

Food and Wine Pairings

The vin jaune of Château-Chalon is ideal for accompanying traditional Jura dishes, such as Bresse chicken with morels, aged Comté cheese, or snails. Its richness and complexity also make it an excellent meditation wine.
