Born to a Swiss father and a Norwegian mother, Bibi Graetz grew up in an artistic and multicultural environment. His estate is located within the Castello di Vincigliata, a medieval castle overlooking Florence. He relies on a non-interventionist approach, highlighting the freshness, aromatic transparency, and expression of indigenous grape varieties.
Vineyards and Grape Varieties
The grapes come from high-altitude plots (300 to 600 meters) located between Fiesole, Vincigliata, Montefili, and the island of Giglio. The vines, often 50 to 80 years old, are managed without irrigation or aggressive inputs. The main grape varieties are Sangiovese, Colorino, Canaiolo, Trebbiano, and Ansonica (on Giglio).
Vinification and Aging
The vinifications are slow, without selected yeasts, often in open vats, then aged in old barrels or vats, depending on the identity of the wine. Graetz favors infusion on contact, a low extraction, and discreet aging that never erases the signature of the terroir.
