Domaine Dal Forno Romano – The Art of Wine in Valpolicella
A Story of Passion and Innovation
Founded in 1983 by Romano Dal Forno, the estate is now managed by his son Marco, with the constant support of his father. Located in the Illasi Valley, east of Verona, the estate covers 34 hectares of vineyards planted at a high density of nearly 13,000 vines per hectare. The grape varieties grown are Corvina, Corvinone, Rondinella, Croatina, and Oseleta, chosen for their ability to express the richness and complexity of the terroir.
An Exceptional Terroir
The vines are planted on gravelly and clayey soils, at about 300 meters altitude, benefiting from an ideal microclimate for viticulture. The valley, wide in the plain and narrower as the altitude increases, offers optimal sun exposure, promoting slow and even ripening of the grapes.
Rigorous Viticultural Methods
Viticulture is focused on quality, with green harvesting to eliminate less ripe bunches and meticulous work in the vineyards. The grapes are harvested manually, carefully sorted, and then dried according to the traditional appassimento method. This technique involves drying the bunches in controlled conditions for a period of 30 to 40 days, thus concentrating the aromas and sugars.
Vinification and Aging
After drying, the grapes are fermented in stainless steel tanks, then the wine is aged in new oak barrels for 23 months. An additional 36 months of bottle aging precedes market release, ensuring perfect integration of aromas and a harmonious structure.

The wines of Domaine Dal Forno Romano are distinguished by their concentration, aromatic richness, and elegance. The Valpolicella Superiore, made from partially dried grapes, offers aromas of jammy black fruits, chocolate, and spices, with a smooth texture. The Amarone, made from fully dried grapes, presents exceptional complexity and depth, with notes of ripe fruits, leather, and tobacco. The Vigna Seré, a sweet wine in the Recioto style, is a rarity of the estate, offering intense flavors of dried fruits, chocolate, and coffee.
