Located in Samaniego, in the heart of the prestigious Rioja Alavesa, Bodegas Baigorri is a bold project founded in 2002, known for its gravity-based winemaking and its iconic building, showcasing a philosophy that combines innovation, precision, and respect for the fruit.
A winery designed by gravity
Designed by architect Iñaki Aspiazu, the winery is built deep underground, on 7 subterranean levels, allowing for gravity-based winemaking without pumping, from manual sorting to aging. This approach prevents premature oxidation and respects the integrity of the grapes, ensuring a fine and controlled extraction.
Vineyards and grape varieties
The estate works with approximately 35 hectares of vineyards owned and selects other plots at altitudes between 450 and 700 meters, on the limestone and clay-limestone soils characteristic of Rioja Alavesa. The main planting is Tempranillo, but Baigorri also cultivates Garnacha, Graciano, Mazuelo, Viura, and Malvasia, using sustainable, sometimes organic farming methods.
Winemaking and aging
Each grape variety, each plot is vinified separately. Maceration is gentle, often in thermo-regulated wooden or stainless steel vats, and aging takes place in French or American barrels, from 12 to 24 months depending on the cuvées. The Baigorri style combines volume, aromatic clarity, and mineral freshness.
