Domaine Jean-Marc Boillot – Duality of Burgundy, Precision and Brilliance


The Domaine Jean-Marc Boillot, located in Puligny-Montrachet, stands out for its ability to express with coherence and brilliance the dual identity of Burgundy: that of the great racy whites of the Côte de Beaune, and that of the structured yet elegant Pinot Noirs of Pommard and Volnay.


Coming from a long line of winemakers, Jean-Marc Boillot first worked alongside his family (notably at Domaine Etienne Sauzet), before creating his own estate in the 1980s, asserting a distinct style, more modern in approach, yet rooted in respect for the terroirs. Today, his daughter Lydie Boillot is gradually taking over, maintaining the spirit of precision and balance.


The estate covers a little over 11 hectares, spread between Puligny-Montrachet, Meursault, Volnay, Pommard, and regional appellations. The vines are cultivated with a reasoned approach, with particular attention to the ripeness of the grapes and limiting yields, to preserve the natural concentration of the wines.


In terms of vinification, the Chardonnays are pressed slowly, fermented in oak barrels (15 to 30% new wood) and aged on lees for 10 to 14 months without excessive stirring, to maintain tension and minerality. The Pinot Noirs are destemmed, macerated for a long time but without aggressive extraction, then also aged in barrels with a moderate proportion of new wood. The entire production is vinified with elegance, sobriety, and balance.


The Boillot style is recognizable by its aromatic purity, finesse of execution, and ability to combine accessibility with aging potential. The whites are tense, floral, sometimes lemony, with a clear limestone structure. The reds, on the other hand, show density without rusticity, with polished tannins and crisp red fruit.
