The Domaine Jean Boillot, now established in Pommard, embodies a certain idea of classic Burgundy, halfway between the controlled power of the reds from the Côte de Beaune and the vibrant minerality of the great whites. Heir to a lineage of winemakers established for several generations, Jean Boillot managed, in the 1980s, to impose a rigorous and coherent style, which gradually refined and modernized under the influence of his children, notably Henri Boillot, before their separation.
The estate operates about fifteen hectares in several key villages of the Côte de Beaune, notably Pommard, Volnay, Savigny-lès-Beaune, Puligny-Montrachet, and Meursault. This diversity of location allows for playing on the nuances of terroir and vintage to compose wines with a strong identity. The vineyard is managed in a reasoned manner, with an emphasis on biodiversity, soil work, and moderate yields to ensure concentration and freshness.
The harvest is manual, with strict sorting in the vineyard and winery. For reds, vinification respects the natural balance of Pinot Noir: total or partial destemming depending on the vintage, gentle maceration, measured extractions. Aging takes place in French oak barrels for 12 to 18 months, with a moderate proportion of new wood (20 to 30% max) to never mask the fruit or the origin of the wine.
For whites, mainly from Puligny-Montrachet, Meursault, and Montagny, fermentations occur in barrels, followed by aging on lees with limited stirring. The style aims for energy and tension, without seeking excessive richness. The wines exhibit a great aromatic clarity, with chalky and saline finishes.
The Jean Boillot style, in both colors, is marked by an overall precision, structural integrity, but without austerity. These are wines made to age well, but which also know how to charm when young, thanks to their balance and a beautiful definition of fruit.

Montagny 1er Cru – lively, lemony, very expressive in youth.
Volnay 1er Cru “Les Angles” – silky, delicately floral, fine palate.
