Domaine Hubert Lamy – The Mineral Intensity on Rocky Flower


The Domaine Hubert Lamy, located in Saint-Aubin, has become in a few decades an essential reference for modern and precise white wines of Burgundy. Founded in the 1970s by Hubert Lamy, the estate underwent a decisive turning point from the 1990s with the arrival of his son, Olivier Lamy, who brought an innovative, demanding vision deeply rooted in respect for the terroirs.


Today, the estate covers about 18 hectares, mainly in Chardonnay, but also in Pinot Noir, spread over Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet, and Santenay. Some vines are located on steep slopes, often at altitude, on poor limestone terroirs, where the vine struggles — which gives wines of remarkable tension.


The work in the vineyard is extremely rigorous: manual plowing, high trellising, low yields, and constant observation of the plant. Harvesting is early to preserve the natural freshness and nervosity of the grapes. The estate is certified in sustainable farming but works with a demand that borders on biodynamics.


In the cellar, Olivier favors long and gentle pressings, light settling, and slow fermentations with indigenous yeasts. The aging is done in barrels of several wines or large containers (600L, foudres), to avoid any excessive woodiness. Some whites are aged on lees for 18 months or more, giving them depth, texture, and brilliance.


The house style is clear: chiseled, straight, deeply mineral wines, with vibrant salinity and perfect balance between energy, tension, and substance. The reds, often underestimated, reveal pure fruit, great drinkability, and remarkable tannin finesse.
