Micro-terroir of exception, artisanal elegance and gourmet intensity

Nestled on less than one hectare in the heart of Saint-Émilion, Clos des Baies is a confidential micro-estate founded by Philippe Baillarguet, cellar master of the prestigious Château Ausone. This vineyard of 0.55 hectare, worked with absolute rigor, embodies an ultra-precise vision of the Grand Cru: minerality, purity of fruit, and silky texture.

Terroir & grape varieties

The vines, about 40 years old, are planted at high density on clay-limestone soils typical of the southern slope of Saint-Émilion. The grape composition combines Merlot (about 65%) and Cabernet Franc (35%), expressing the freshness of the terroir with finesse.

Viticulture & winemaking

Entirely hand-harvested with meticulous sorting, the grapes are vinified by plot. Fermentations are slow, in thermo-regulated stainless steel tanks, followed by aging in French oak barrels for 16 to 18 months, with about 60% new wood. The approach is artisanal, with no compromise on precision.

Style & aging

The wine seduces with its nose of ripe black fruits, violet, sweet licorice, and noble spices. On the palate, it offers a velvety, structured material without heaviness, carried by a tonic freshness and beautiful energy. Recommended aging of 10 to 15 years, with a peak around 7 to 10 years depending on the vintage.

Iconic cuvées

  • Clos des Baies Grand Cru: the main wine, concentrated, chiseled, with straight elegance.

  • Face Baies: second wine more immediate, all in fruit, ideal for discovering the style of the estate.
