Philosophy and winemaking
Antoine Jobard is a proponent of long aging, without haste. Fermentations are spontaneous, aging lasts 18 to 22 months, in barrels of which few are new (usually 15-20%), to let the terroir take precedence over the wood.
His wines are rarely demonstrative in their youth, but they reveal themselves over time, gaining complexity and volume with aeration or in the cellar.
