A family estate of nearly two centuries
Owned by the same family since 1834, the estate is now managed by Claude and François de Nicolay. They oversee 13.7 ha spread across Savigny-lès-Beaune, Pernand-Vergelesses, and Aloxe-Corton, a heritage of a historical link with Champagne via the Château de Nicolay.
Biodynamic conversion & precision viticulture
The estate transitioned to organic farming in the late 1990s and was certified biodynamic in 2011. The soils are worked by horse, treatments are natural (milk thistle against powdery mildew), and harvesting is entirely manual, promoting soil life and vegetative balance.
Classic vinification & respectful aging
Pinot Noir and Chardonnay benefit from whole cluster fermentations (depending on the vintage), aged 14–20 months in barrels (0–15% new wood) or in vats, without fining or filtration. The approach is sober, true to the terroir, yet open to elegance and finesse.
Style: purity, tension, longevity
The wines are distinguished by their precise structure, silky texture, and pure aromatic profile — evoking fresh red or white fruits, flint, iodized salinity. The Premier Crus like Les Lavières, Les Vergelesses, and the Grands Crus of Corton (Clos du Roi, Bressandes) are praised for their depth and aging potential.
