Established in 1846 near Port Askaig on the island of Islay, Caol Ila is the largest distillery on the island in terms of capacity. Located facing the strait between Islay and Jura, it benefits from a unique maritime environment, directly reflected in the style of its whiskies.
The Caol Ila style is based on distillation in slender stills that give the distillate a typical finesse and lightness, despite the use of peat. The spring water comes from nearby hills, and the barley is smoked with peat. Aging is mainly done in second-fill bourbon casks, sometimes complemented by sherry casks for special editions.
Caol Ila 12 years: classic and accessible expression, with delicate smoke, lemony, saline, and herbal notes.
Caol Ila 18 years: richer and more complex, with more mellow smoke, touches of honey, leather, and soft spices.
Distillers Edition: finished in Moscatel casks, adding sweetness and candied fruit aromas.
Cask Strength: cask strength versions, very concentrated, for pure peat enthusiasts.
Unpeated: rare expressions highlighting a floral, fruity, and delicate style, while retaining the maritime identity.
The Caol Ila style is characterized by a dry, fine, and iodized smoke, combined with great freshness. Less oily and medicinal than some Islay neighbors, it offers a more balanced, accessible, and refined profile. It is a whisky that is both typical of Islay and perfect for introducing peat.
