Domaine des Varoilles – The Elegance of the Great Terroirs of Gevrey
An Exceptional Estate in the Heart of the Côte de Nuits
The Domaine des Varoilles is located in Gevrey-Chambertin, the birthplace of some of the greatest red wines of Burgundy. The estate covers about 10 hectares, entirely located in the commune, with prestigious climates in monopole, a rare and precious feature in Burgundy.
A Heritage of Historical Climates
The estate owns emblematic plots such as:
La Romanée (monopole)
Clos des Varoilles (monopole, 1er Cru)
Clos du Meix des Ouches (monopole)
Gevrey-Chambertin 1er Cru “La Justice”,
and the magnificent Charmes-Chambertin Grand Cru.
The soils are predominantly clay-limestone, with excellent east-southeast exposure and slopes that favor natural drainage.
Precise & Low-Intervention Winemaking
The harvest is manual, and the grapes are rigorously sorted. Vinification is done with partially destemmed grapes, with cold pre-fermentation maceration, followed by fermentation in stainless steel tanks. Aging lasts 12 to 18 months in oak barrels (30–50% new depending on the cuvées), aiming for a balance between structure, freshness, and finesse.
Style & Signature
The wines of Domaine des Varoilles express a classic typicity of Gevrey-Chambertin, between controlled power and racy elegance. Silky tannins, aromas of red and black fruits mixed with spices, a structured palate without austerity: these are wines with a high aging potential (10–20 years depending on the crus) that can also be enjoyed in their youth after decanting.
