Originally from Poland, Paul Lato is a former passionate sommelier turned genius winemaker. Settled in California since the early 2000s, he embodies a unique vision of wine: high purity vintages, Burgundy-inspired, from the finest terroirs of the Central Coast, particularly in the Santa Maria and Santa Rita Hills.
Paul Lato does not own any vineyards himself. He rigorously selects exceptional parcels, cultivated by trusted partner winemakers. Among the emblematic sites are Bien Nacido, Sierra Madre, Zotovich, and Gold Coast Vineyard, known for their freshness, ideal exposure, and geological diversity. These terroirs allow Paul Lato to accurately express the minerality of Chardonnay, the delicacy of Pinot Noir, and the controlled power of Syrah and Grenache.
The wines signed by Paul Lato are immediately recognizable: aromatic without heaviness, tense without austerity, powerful without excess. Each vintage is a masterpiece, limited to a few barrels, vinified with obsessive attention to detail.
His Chardonnays rival the best Puligny, his Pinot Noir evokes Chambolle-Musigny, while his Syrah possesses the brilliance and depth of the greatest Côte-Rôtie.
Le Souvenir Chardonnay – Bien Nacido: mineral, intense, floral, with great tension.
Suerte del Sur Pinot Noir – Solomon Hills: silky, vibrant, with a bouquet of red fruits and black tea.
Il Padrino Syrah – Bien Nacido: dark, deep, spicy, yet always refined.
Cuvée des Artistes – Grenache: juicy, floral, inspired by the most elegant Rayas.
At Paul Lato, everything is vinified in micro-lots, from manual harvests. Fermentations are spontaneous, extractions gentle, and aging is done in high-quality French oak barrels, with judicious use of new wood. Sulfur is used sparingly. His credo: intervene as little as possible to preserve the soul of the wine, while guiding each vintage to its purest expression.
