Mediterranean subtlety, mineral purity, and elegant balance
Exceptional estate of the Palette appellation, Château Simone spans approximately 16 hectares of varied terroirs (blue clay, sandstone, red sand). Led by Daniel Roulot and his team, the estate is praised for its biodynamic viticulture and timeless style, combining freshness, finesse, and nuanced complexity.
Rich soils (blue clay with barite, Ollioules sandstone, red sand).
Old vines of Grenache, Mourvèdre, Cinsault, Clairse, and Muscat, mostly in red; Sauvignon Blanc is used in white cuvées.
Average age of the vines: 60–80 years.
Conducted biodynamically with manual harvesting and rigorous selection.
Natural vinification, without sulfur or filtration, often in vats or concrete eggs.
Aging for 12 to 18 months in demi-muids or foudres, sometimes in amphorae, ensuring tension and aromatic integration.
Château Simeone (Grand Vin): light color, complex nose of garrigue, sweet spices, tangy red fruits. On the palate, extreme finesse, herbal freshness, and marine salinity. Can age up to 15–20 years.
Château Simone Blanc: a dry white with great minerality, rich in citrus, herbs, and flint; remarkable liveliness.
Les Travers: a more structured and expressive red, from the best parcels.
