Origins and Philosophy
It was with the arrival of Raphaël Bérèche in 2004 that the house took a decisive turn. Trained in Burgundy and inspired by organic viticulture, he embarked on a radical approach based on parcel vinification, respect for the lunar calendar, and a constant search for natural balance.
Vineyard and Cultural Approach
The estate operates about 10 hectares, spread between Ludes, Ormes, Mareuil-le-Port, and Trépail, with additional supplies under strict control. Viticulture is organic without certification, with grass cover, plowing, moderate treatments, and manual harvesting.
Vinification and Aging
Vinification is done by locality, with fermentations in small barrels and demi-muids, without added yeasts, followed by long aging on lees. Malolactic fermentations are not systematically blocked. Riddling is done by hand, and disgorgement is carried out without dosage or with very low dosage.
