Domaine François Crochet – The pure and mineral expression of Sancerre


An engaged and family-run estate
Based in Bué since 1998, François Crochet combines traditional winemaking with certified biodynamic production, with vines cultivated without herbicides and with strict respect for the terroir.


Varied terroirs for two grape varieties
The estate covers about 10 ha (7 ha in Sauvignon Blanc, 3 ha in Pinot Noir), spread over flint, clay-limestone, and limestone soils in the communes of Bué, Sancerre, Crézancy, and Thauvenay.


Rigorous viticulture & manual harvesting
Practicing sustainable farming and biodynamics since 2017, with debudding, controlled grassing, exclusively manual harvesting with strict sorting for optimal ripeness.


Parcel-based vinification & controlled aging
The whites are fermented in stainless steel tanks or concrete eggs, without malolactic fermentation, then aged on fine lees (up to 11 months). The reds are partially destemmed, fermented in tanks, and aged in demi-muids.


Style & aging potential
The Sauvignon offers marked salinity, freshness, and vibrant fruit. The Pinot Noir is concentrated, structured, and ripe. The wines express remarkable purity and great aging potential when kept cool.
