Appellation Saint-Aubin – The discreet elegance of the great white wines of Burgundy
Located in Côte de Beaune, between Puligny-Montrachet and Chassagne-Montrachet, the Saint-Aubin appellation (AOC since 1937) produces some of the finest and most distinctive white wines of Burgundy, as well as elegant red wines made from Pinot Noir. Long remaining discreet, it now attracts lovers of tense and mineral Chardonnay, while offering excellent value for Burgundy Premier Cru wines.
Terroir & geography
The appellation is exclusively located in the commune of Saint-Aubin, at an altitude of 300 to 350 meters, on well-exposed steep slopes. The clay-limestone soils and the immediate proximity to the world's most famous terroirs give the wines a remarkable minerality.
Grape varieties & wine style
White wines (approx. 75% of production)
Made 100% from Chardonnay, they are distinguished by their freshness, mineral tension, and aromas of citrus, white flowers, and gunflint.
Red wines (approx. 25%)
Made from Pinot Noir, they have a light, fruity profile with fine tannins, ideal for medium aging or enjoying on the fruit.
Climats classified as Premier Cru
Saint-Aubin has 30 climats classified as Premier Cru, spread over high-quality plots. Among the most renowned:
En Remilly – direct neighbor of Chevalier-Montrachet
La Chatenière – steep plot producing chiseled wines
Les Murgers des Dents de Chien – very mineral, tense
Les Champlots, Sur Gamay, Le Charmois, Les Frionnes, Les Perrières
These terroirs produce cuvées of great precision, capable of competing with some more prestigious crus.
Food & wine pairing
White wines: grilled fish, shellfish, oysters, cream poultry, cooked pressed cheeses (comté, beaufort).
Red wines: fine charcuterie, roasted white meats, poultry in sauce, washed-rind cheeses.
