Domaine Henri Boillot – Precision as a Signature
Located in Meursault, the Domaine Henri Boillot has established itself over the past two decades as one of the most consistent and respected names in the Côte de Beaune. Taken over at the turn of the 2000s by Henri Boillot himself, the estate has experienced a remarkable qualitative rise, thanks to a very clear vision: to let the terroir speak with surgical precision, both in white and red, without artifice or excess.
Coming from a lineage of winemakers, Henri Boillot has managed to both respect the family heritage and impose his own signature. He notably refocused the estate on elite plots in Côte de Beaune (Puligny-Montrachet, Meursault, Volnay, Pommard), while developing a very qualitative trading activity under the same label.
The Chardonnays of the estate, from crus like Puligny-Montrachet 1er Cru “Les Perrières”, “Clos de la Mouchère” (monopoly), or Meursault 1er Cru “Les Charmes”, are of striking straightness, tense, precise, with perfectly controlled aging. Fermentations are done in barrels, with moderate use of new wood (20 to 30%), without excessive stirring. The aging lasts about 18 months, on fine lees, to preserve the aromatic brilliance and mineral finesse.
On the Pinot Noir side, the reds from Volnay, Pommard, or Savigny-les-Beaune are vinified with equal rigor: manual harvesting, meticulous sorting, total destemming, moderate macerations, and aging in 350 L barrels (often lightly toasted). The style is clean, pure, of great intensity, without heaviness or disguise. Henri Boillot's hand is recognized in the finesse of the textures, the brilliance of the fruit, and a rare readability of the terroirs.
Today, the estate also benefits from the involvement of Guillaume Boillot, Henri's son, trained alongside his father and now very active in winemaking and vineyard management. The generational transition is taking place smoothly, in continuity with the house style.
