As a fifth-generation winemaker from Volnay, Nicolas Rossignol trained in Beaune and then gained experience in top estates across France and South Africa. He founded his own domaine in 1997 with 3 ha, then merged with the family estate in 2011. Now covering around 17 ha across 30 appellations, he is a reference for Côte de Beaune red wines.
He practices reasoned farming with biodynamic influence: no herbicides, light ploughing, lunar-aligned work. Harvests are done by hand in small baskets with meticulous sorting. In the cellar, natural yeast ferments, gentle extraction methods (usually pump-over), and aging in oak (12–20 months, under 50% new) without fining, filtration or racking.
Rossignol's wines are defined by silky textures, pure aromatics, and subtle intensity. Red fruit, light spice, dried florals, and precise structure led by saline freshness. They communicate a refined but clear interpretation of Burgundy’s Pinot Noir.
