An Artisan of the Plateau Magnified by the Borie Family
Located in the heart of Saint-Émilion, Château Haut-Sarpe has been owned by the Domaines Barons de Rothschild (Borie) since 1995. Today, Marie-Christine Borie oversees the overall strategy, accompanied by Aurélien Troplong, technical director, and the oenologist Nicolas Audebert. Together, they have restored the balance between classic elegance and assertive structure.
Terroir & Grapes: Limestone Richness and Merlot Intensity
The 9 ha of vineyards rest on a limestone subsoil mixed with clay, typical of the plateau. The grape composition relies on Merlot (~85%) and Cabernet Franc (~15%), for a dense, aromatic, and balanced wine.
Viticulture & Philosophy: Sobriety, Parcel-Based, Precision
Responsible viticulture, worked soil, selective grassing, and manual harvesting. Sorting is done parcel by parcel, harvesting in small crates to preserve the integrity of the grapes and the aromatic finesse.
Vinification & Aging: Tiled Finesse and Micro-Parcel
Vinification is carried out separately according to the parcels, in thermo-regulated stainless steel vats, with macerations of 3 to 4 weeks. Aging of 16 to 18 months in French barrels (≈ 50% new), refining the tannins while preserving freshness and tension.

– Château Haut-Sarpe: Grand Vin with an elegant profile, notes of mocha, black cherry, graphite, fine tannins, and a saline and long finish.
– Le Petit Haut-Sarpe: second wine, more accessible, fruity and spicy, ready to be enjoyed young with elegance.
