Located in Magny-lès-Villers, at the crossroads between the Hautes-Côtes de Nuits and Beaune, Domaine Jayer-Gilles has built a solid reputation for its unique style: dense, structured Pinot Noirs crafted for aging, which contrast with the more ethereal approach typical of some neighbors.
The estate, relatively small in size, is managed in a rigorous and artisanal manner, in the spirit of the late Robert Jayer, whose demand for excellence continues to inspire the current approach. The vinifications are now conducted with the same desire for concentration and clarity, while respecting the identity of the terroirs.
The grapes are harvested at perfect maturity, often very late, to maximize phenolic richness. The winemaking involves long macerations, sometimes up to three weeks, with intense punch-downs to extract color, tannins, and depth. The aging, generally in 100% new oak barrels, lasts between 18 and 24 months, which imparts a notable oaky signature, integrated over time.
The style of the wines is marked by a very deep color, a full and structured palate, notes of black fruits, spices, and undergrowth, with a firm but noble tannic structure. These are wines to be awaited, often austere in their youth but capable of evolving magnificently.
