Terroir & grape varieties: Mayenne granite and fruity expression
The vineyard, modest but of high quality, stretches over schist and granite soils enhancing freshness and minerality. The planting is primarily composed of Chenin Blanc (100%), pruned to favor the balance between sweetness and tension.
Viticulture & philosophy: rarity and precision
Sustainable viticulture, manual harvesting with rigorous selection of berries affected by noble rot. The rarity of the production, sometimes sporadic depending on the year, reflects a high demand in the quest for terroir expression.
Vinification & aging: purity and tension
Gentle pressing, partial fermentation in oak barrels - some in neutral wood to preserve freshness - followed by aging on fine lees. No fining or filtration; the wine is aged for 12 to 18 months before bottling.
