Located near Orvieto in Umbria, Castello della Sala is an ancient medieval castle dating back to 1350, acquired by the Marchesi Antinori in 1940 with the aim of exploring white viticulture. It was under the direction of Renzo Cotarella from 1979 that the terroir, known for its morning mists and limestone soils, was completely replanted to create a long-aging white wine. The first vintage of Cervaro della Sala was born in 1985 and remains a global benchmark to this day.
At the heart of the project: revealing freshness, minerality, and longevity. The early manual harvest is vinified with gravity and temperature control. The main grape variety, Chardonnay, undergoes fermentation and malolactic fermentation in barrels, then the wine remains several months in stainless steel tanks before being bottled. The blend includes about 10–15% of Grechetto for local typicity. Aging takes place in the sober cellars under the medieval walls, preserving freshness and tension.
The 229 hectares of vineyards extend between 220 and 470 meters in altitude, on clay-limestone soils rich in fossil shells, promoting a typical mineral expression. The planting includes Chardonnay, Grechetto, Pinot Noir, Sauvignon, and other varieties, carefully cultivated in an Umbrian climate with a high thermal amplitude.
Cervaro della Sala: iconic Chardonnay/Grechetto blend, aged in barrels, known for its structure and evolution.
Bramìto della Sala: 100% Chardonnay, barrel-aged, younger and crisp.
Nibbio della Sala: high-altitude Pinot Nero, fermented and aged in barrels, elegant expression.
Muffato della Sala: botrytized wine, atypical and complex cuvée, made from a blend of Sauvignon, Riesling, Grechetto, Traminer, Sémillon.
