Domaine Les Pallières – Raw Terroir, Natural Châteauneuf Expression
Located in Courthézon at the heart of Châteauneuf-du-Pape, Domaine Les Pallières covers around 18 hectares of vines planted on typical stony plateau soils—round pebbles, clay and limestone. Originally founded by the Mahler family and now run by a small collective of shareholding technicians, the domain practices manual harvesting, minimal intervention viticulture, spontaneous fermentations, and serves its wines without fining or filtration.
The estate follows a telquelist philosophy—no additives, no removals. Each grape parcel—Grenache-dominant with Mourvèdre, Syrah, Cinsault—is vinified separately at full ripeness. Only well-balanced lots are blended; fermentation is natural, slow and gentle.
Most élevage takes place in concrete tanks to preserve fruit purity, with the occasional use of neutral foudre or old oak only when structural heft is needed. There is no new oak and sulfur addition is minimal. The wines emphasize natural density, saline grip, fine tannins and unadorned fruit clarity.
