Since the 1970s, the estate has promoted native grape varieties, avoiding international blends and focusing on site-specific elegance and clarity.
The estate follows sustainable practices, with no herbicides or synthetic chemicals. Yields are kept low to ensure concentration and balance.
Fermentations are carried out in stainless steel or concrete vats, with gentle extractions. Aging is tailored to each wine — some in French oak barrels (moderately used), others in tanks — always with a focus on freshness and typicity.
Castellare’s wines are defined by natural elegance, bright acidity, and a refined structure. The Sangioveto expresses itself with notes of black cherry, violets, tobacco, and subtle spice. The style is classic yet approachable, with impressive food-pairing versatility and aging potential.
