A self-taught and daring winemaker

Taking over a family plot in Auxey-Duresses in 2000, Agnès Paquet, who comes from a business background, turned to winemaking after an internship with a Californian cooper. She signed her first harvest in 2001 and has since managed a 13-hectare estate in Côte and Hautes-Côtes de Beaune, certified organic in 2022, without herbicides since 2004.

Varied terroirs and noble grape varieties

From Château-Melin in Meloisey to Pommard, Saint-Aubin 1er Cru “Les Perrières”, Chassagne-Montrachet, and Auxey-Duresses, the estate cultivates Chardonnay, Pinot Noir, and Aligoté on Jurassic limestone soils. The vineyard, plowed and managed manually, includes vines up to 90 years old.

Style: purity, minerality, freshness

The whites (Saint-Aubin, Auxey-Duresses, Aligoté) are distinguished by their saline notes, vibrant tension, and silky texture. The reds, of great finesse, offer crunchy fruits, delicate tannins, and refreshing acidity, embracing Burgundian typicity.

Vinification serving the terroir

Manual harvesting, double sorting, indigenous yeasts, short maceration in concrete for reds, barrels (15–30% new) for whites (11–18 months). No filtration, minimized sulfites, and limited chaptalization.
