Expressive power, precise character, and terroir elegance
Symbol of an intense expression of Saint-Émilion, Château Pavie-Macquin is a Grand Cru Classé renowned for its sunny and tannic style, while maintaining finesse and depth. The 32-hectare estate is managed by Anne-Laure and Jean Vaillé alongside the technical team, with a clear goal: to cultivate the terroir's precision, the energy of the grape varieties, and the soul of the blend.
The vineyard rests on clay-limestone terraces mixed with deep gravel, oriented southeast, exposed to capture warmth and finesse. The grape varieties are intended to highlight this encounter: Merlot (≈65%), Cabernet Franc (≈30%), and Cabernet Sauvignon (≈5%). Planted at high density, the plot combines youth and maturity to optimize concentration and aromatic profile.
Parcel management, controlled grassing, complete manual harvesting, and strict sorting in the cellar. A sustainable approach favoring diversity, soil balance, and perfectly healthy vines enriches the expression of the terroir.
Fermentations carried out by parcel, in thermo-regulated vats, with long macerations (3 to 4 weeks). Aging for 16 to 20 months in French barrels (≈70% new wood), complemented by foudres and ovoid vats to seek purity, tension, and refined structure.
Château Pavie-Macquin: deep color, bouquet of ripe black fruits, violet, oriental spices, mineral and licorice touch. On the palate, the attack is dense, the middle ample, fleshy and well-wrapped tannins, and a salivating and persistent finish. The wine combines power and elegance, ready to age for 20 to 30 years.
