Château Pavie 2003
2003 Chateau Pavie, Saint-Emilion Grand Cru, France
Intense and ripe nose, dominated by aromas of blackcurrant, candied black cherry, and licorice. Secondary notes of mocha, espresso, charred wood, and grilled meat emerge with aeration, accompanied by a touch of smoke and garrigue herbs. The bouquet is rich, layered, and reflects a pronounced yet well-integrated oak influence.
The attack is dense and concentrated, showing generous weight and a broad, enveloping texture. The tannins, still present, are ripe and polished. The wine unfolds with deep flavors of very ripe dark fruits, licorice, sweet spices, and graphite. The finish is long and powerful, marked by lingering notes of black plum, dark chocolate, and warm stone, delivering impressive persistence.
