Based in Montigny-lès-Arsures, Stéphane Tissot is a leading voice in the Jura wine renaissance. Since the 1990s, he has transformed the family estate into a benchmark for biodynamic and natural winemaking, exploring the region’s terroirs with unmatched precision and passion.

Today, the domaine spans over 50 hectares, certified biodynamic, farmed with care and deep respect for soil life and biodiversity.

Philosophy and winemaking

Tissot embraces a non-interventionist yet deeply thoughtful philosophy. Fermentations are natural, with native yeasts, no additives, and minimal sulfur (if any). Aging takes place in barrel, amphora, or demi-muid, depending on the cuvée — some are topped up (“ouillé”), others aged under flor (“sous voile”).

Each wine is a singular expression of its site, vintage, and internal energy.

Wine style

Tissot’s wines are vibrant, precise, and full of life. The ouillé whites (especially from Chardonnay) are sharp, saline, and mineral-driven. The reds (Trousseau, Poulsard, Pinot Noir) are light, spicy, and elegant, with great drinkability and finesse.

Oxidative wines (like Vin Jaune) are layered and intense, built for decades of aging.
