Description
Made by Stéphane Tissot, this Sous Voile Savagnin comes from biodynamic vineyards on clay-limestone soils in Arbois. Aged over 6 years under flor (yeast veil) in old barrels, without topping up, it follows the traditional oxidative style of the Jura.
This long élevage results in a wine of depth, salinity and aromatic power.
Nose: Walnut, curry, dried apple, orange peel, saffron, mushroom, celery root, forest floor.
Palate: Structured, vibrant and dry. Powerful acidity balances its oxidative richness. Exceptionally long finish with spice, salinity and nutty persistence. A contemplative, cellar-worthy wine.
