Description
Crafted in strict Jura tradition, this Vin Jaune spent over 6 years 3 months under voile in barrel, then bottled in a 62 cl clavelin. Ganevat’s mastery allows the oxidative character to reveal depth, tension, and balance.
Nose: walnut kernel, mild curry, dried apple, underbrush and bitter almond.
Palate: honeyed texture, lively saline acidity, strong umami, iodized hazelnut and spice. Persistent finish that lingers.
