Terroir & geology: the limestone signature


Reliefs of parallel hills, varied exposures, and soils of Jurassic limestones often mixed with marls. The cliffs of Solutré and Vergisson dominate a vineyard that is both sunny and ventilated, conducive to complete ripeness without losing freshness. This geology explains the chalky texture, the saline tension, and the aromatic purity of the best Pouilly-Fuissé.




Grape variety & wine style


100% Chardonnay.
Aromas of white fruits (pear, peach), white flowers (acacia, hawthorn), citrus zest, almond, and wet stone. On the palate: juicy fruit core, chalky mid-palate, saline length. Various aging methods (stainless steel, large containers, fine wood) depending on producers and climates.




The Premiers Crus


Historical recognition in 2020: 22 climates now authorized to bear the mention Premier Cru. They are spread over the four communes and allow a parcel-based reading of the Mâconnais: more limestone slopes for straight and vibrant wines; areas with deeper marls for broader textures. The label can mention the name of the climate (e.g., “Pouilly-Fuissé Premier Cru Les Perrières”).

  • Signature pairings: noble fish (turbot, sole), shellfish and crustaceans, creamy Bresse poultry, slow-cooked veal, Japanese cuisine (tempura, fatty sashimi), pressed cheese (Comté 12–18 months).




  • Temperatures: 10–12 °C for village cuvées; 12–13 °C for Premiers Crus.




  • Opening: 30–60 min to reveal the limestone dimension and the saline finish.
